Cinnamon Rolls

  • Pre-dough

  • 480 g Flour
  • 4 dl Milk
  • 40 g Yeast
  • Add to pre-dough

  • 400 g Flour
  • 1 Egg
  • 1/2 tsp Salt
  • 1 1/2 tsp Cardamom
  • 160 g Sugar
  • 160 g Butter
  • Filling

  • 400 g Butter
  • 2 dl Sugar
  • 2 tbsp Cinnamon
  • 1 tsp Cardamom
  • Syrup

  • 1 dl Sugar
  • 1 dl Water

  1. With the dough hook on your kitchen assistant, mix the pre-dough at low speed for 4 minutes. Let rise for 20 minutes.
  2. Then add the rest and mix for 13 minutes. Perform the gluten test.
  3. Refrigerate for 30 minutes.
  4. Make the cinnamon butter with an electric whisk, whisk until fluffy.
  5. Roll out the dough, spread on the cinnamon filling, and roll up. (If the dough is too large, divide it into two and roll them out separately.)
  6. Cut the roll with a knife, you should get between 25-30 buns in total.
  7. Place the buns you want to bake on parchment paper, cover with a towel, and let rise for 30-50 minutes. Freeze the rest as shown in the video.
  8. Brush the risen buns with egg wash and sprinkle with pearl sugar. Bake in the oven at 200°C for 6-7 minutes. Take them out and brush with sugar syrup.
  9. Serve and enjoy the king of the coffee table!
